“Colatura di Alici”, a traditional salty anchovy sauce, the pride of Cetara, and a traditional agricultural product (Prodotto Agroalimentare Tradizionale, P.A.T) with a liquid consistency and amber colour. Its origins date back to Roman garum, a true delicacy of antiquity, whose recipe was recovered in the Middle Ages by the monks of the Amalfi Coast. An ancient dressing for the modern lovers of good food, superb with spaghetti and perfect for accompanying dishes of fish or vegetables.
