Preparation

Season the beef with a pinch of salt, a pinch of pepper and a drizzle of extra virgin olive oil.
Place it on a plate with the help of a food ring mould.

To serve

Accompany with anchovy cream mayonnaise and mixed salad seasoned with oil, lemon and baby capers.
