Colatura di alici
Colatura di Alici (anchovy dripping), flagship of Cetara, is an Italian Traditional Agri-food Product (P.A.T.), with a liquid consistency and an amber colour.
It originates from a sauce called garum that was a delicacy in ancient Rome. Its recipe was found in the Middle Ages by the monks of the Amalfi Coast.
An ancient dressing for modern lovers of fine food: a perfect match for spaghetti and a perfect pairing for fish or vegetable dishes.
