Lamb’s lettuce, necterine and mackerel salad



Peel and cut the cucumbers into sticks of 2cm in length.
Slice the necterines very thinly, possibly with the help of a mushroom slicer. Cut the strawberries into slices.
Emulsify lemon juice with oil and a pinch of salt and pepper. Season with a little grated lemon peel.
Mix the lamb’s lettuce with the necterines, strawberries and cucumbers, season it lightly and arrange it in the plates.
Add the mackerel fillets broken into pieces.

To serve

Sprinkle the salad with the toasted mixed seeds and the remaining emulsion.
